Ingredients
  

  • 150 g noodles (any kind)
  • 6 garlic cloves
  • 1 green onion (scallions or spring onions)
  • 3 tbsp red chili flakes
  • 2 tbsp cooking oil
  • 1 tbsp toasted sesame seeds
Sauce
  • 2 tbsp soy sauce (light or regular)
  • 1 tbsp oyster sauce
  • 1/4 cup water

Method
 

Prep
  1. Finely chop the garlic. Thinly slice the green onion, reserving the green parts for garnish.
  2. Combine the soy sauce, oyster sauce, and water in a bowl.
  3. Cook noodles according to package instructions. Rinse with cold water, drain well, and set aside.
Make the Sauce
  1. Over low heat, fry the garlic and the white part of the green onion in 2 tablespoons of cooking oil until golden.
  2. Add the red chili flakes. Fry until fragrant, ensuring the chili does not burn.
  3. Add the soy sauce, oyster sauce, and water mixture. Simmer until thick, about 3 minutes.
Stir Fry Noodles
  1. Add the drained noodles and stir-fry for 2 minutes.
  2. Garnish with green onion and toasted sesame seeds.

Ingredient Swap: I've often swapped out the specified noodles for whatever I have on hand, like ramen noodles or even thin spaghetti, and it always turns out great.
