Dressing
  • 2 tablespoons extra-virgin olive oil preferably from California
  • 1 tablespoon fresh Meyer lemon juice or regular lemon juice

  • 1/8 teaspoon freshly ground black pepper plus more to taste

Method
 

Assemble Salad
  1. In a large mixing bowl, combine the diced cucumber, tomatoes, avocado, red onion, and cilantro. Gently stir to mix evenly.
  2. In a small bowl or jar, whisk together the olive oil, Meyer lemon juice, salt, and pepper until emulsified.
  3. Pour the dressing over the salad and toss very gently with a spatula or wooden spoon to coat without mashing the avocado.
  4. Serve immediately for the brightest flavor, or cover and refrigerate for up to 30 minutes to let the flavors meld. Give a quick stir before serving.
