Ingredients
  

  • 1 lb ripe peaches, diced
  • 1 large Roma tomato, diced
  • 1/2 small red onion, diced
  • 1/2 jalapeno pepper, minced seeds removed for less heat
  • 2 tablespoons fresh cilantro, chopped
  • 1 large lime, juiced
  • 1/2 teaspoon salt plus more to taste
  • 1/4 teaspoon black pepper plus more to taste

Method
 

  1. In a medium bowl, combine the diced peaches, tomato, red onion, jalapeno, and cilantro.
  2. Squeeze the lime juice over the mixture, then sprinkle with salt and pepper. Stir well to combine. Let the salsa rest for 15 minutes at room temperature before serving to allow the flavors to meld. Enjoy with chips or as a topping.

Notes

For a milder salsa, remove the jalapeno seeds and membranes. If peaches are not in season, use frozen diced peaches (thawed and drained). Store leftovers in an airtight container in the fridge for up to 2 days. This salsa is excellent on grilled chicken, fish, or tacos. Letting it sit for 15 minutes is key for the best flavor. Adjust salt and lime juice to your taste preference.
