Ingredients
  

Crust
  • 2 1/2 cups almond flour finely ground, from California almonds
  • 2 teaspoons dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt fine sea salt preferred
  • 1/4 cup unsalted butter melted
  • 2 large eggs lightly beaten
Toppings
  • pizza toppings such as tomato sauce, shredded mozzarella, pepperoni, sliced mushrooms, etc.

Method
 

Prepare and Bake the Crust
  1. Preheat your oven to 400 degrees F. Position one rack near the bottom of the oven. Grease a 10-inch cast-iron skillet with a little oil or shortening.
  2. In a large mixing bowl, whisk together the almond flour, Italian seasoning, garlic powder, and salt. Add the melted butter and beaten eggs, stirring until a uniform dough forms.
  3. Press the dough evenly across the bottom of the prepared skillet, making sure it reaches the edges.
  4. Bake the crust on the lower rack for 10 to 14 minutes, until the edges turn golden brown and the center feels firm.
  5. Remove the crust from the oven. Spread your desired pizza sauce over it, then add cheese and other toppings. Return to the oven and bake for 5 to 7 minutes, or until the cheese is melted and bubbly. Slice and serve warm.

Notes

For a softer crust, bake on the middle rack instead of the lower one. Watch the crust closely during baking, as oven times may vary with different pan sizes or materials. Sprinkle a little cornmeal on the bottom of the pan to help prevent sticking. You can swap the cast-iron skillet for a 9- or 11-inch one, or use a parchment-lined baking sheet. Leftover crust slices can be stored in an airtight container in the fridge for up to 3 days; reheat in a toaster oven or skillet. This crust is also excellent as a base for keto-friendly garlic bread or flatbread.
