California-Style Bang Bang Chicken Skewers

Juicy chicken skewers marinated in a creamy bang bang sauce with mayo, sweet chili, and sriracha, grilled to charred perfection. Served with extra dipping sauce.

Ingredients
  

For the Chicken and Marinade
  • 1 lb chicken breast or use boneless, skinless thighs for more moisture
  • 1/2 cup mayonnaise preferably full-fat
  • 1/4 cup sweet chili sauce like Thai Kitchen brand
  • 2 tbsp sriracha adjust for heat preference
  • 1 tbsp fresh lime juice from a Meyer lemon if available
  • 1 clove garlic minced
  • 1 tsp fresh ginger grated
  • 1 tbsp soy sauce low-sodium recommended
  • 1 tsp toasted sesame oil California Olive Ranch brand works well
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground
  • 8 wooden skewers soaked in water for 30 minutes before grilling
For Serving
  • 1/4 cup mayonnaise for dipping sauce
  • 1/4 cup sweet chili sauce for dipping sauce
  • 2 tbsp fresh cilantro chopped, or parsley if preferred

Method
 

Marinate the Chicken
  1. Cut the chicken into 1-inch cubes, then set aside.
  2. In a medium bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper until smooth and creamy.
  3. Add the chicken pieces to the bowl and toss until each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or overnight for deeper flavor.
Grill the Skewers
  1. Preheat your grill or grill pan to medium-high heat, around 400°F to 450°F. Thread the marinated chicken onto the soaked skewers, leaving about 1/2 inch between each piece.
  2. Place the skewers on the grill and cook for 10 to 15 minutes, turning 2 to 3 times, until the chicken is charred at the edges and reaches an internal temperature of 165°F on an instant-read thermometer.
  3. Remove the skewers from the grill and let them rest for 2 to 3 minutes before serving.
Serve
  1. While the chicken rests, make the dipping sauce by stirring together the extra mayonnaise and sweet chili sauce in a small bowl until combined.
  2. Arrange the skewers on a platter, sprinkle with chopped cilantro or parsley, and serve with the dipping sauce on the side.

Notes

For more tender skewers, use chicken thighs instead of breasts. Make sure the grill is properly hot before adding the chicken to get good char marks. Don't move the skewers too early or they'll stick. Soaking wooden skewers for at least 30 minutes prevents them from burning. Leftover skewers can be stored in the fridge for up to 3 days and reheated in a hot oven or air fryer.
