California-Style Main Dish Pasta Salads

Ingredients
  

  • 24 ounces tri-color rotini pasta
  • 1 pint cherry tomatoes halved
  • 12 ounces sliced pepperoni
  • 1 medium red onion finely diced
  • 1 medium green bell pepper diced
  • 16 ounces fresh mozzarella cheese cut into small cubes
  • 1 cup grated Parmesan cheese
  • 8 ounces pitted black olives sliced or halved
Vinaigrette Dressing
  • 1 ½ cups extra-virgin olive oil preferably California-grown
  • ½ cup red wine vinegar
  • 2 tablespoons Italian seasoning
  • 2 teaspoons garlic powder
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes optional for heat

Method
 

  1. Bring a large pot of salted water to a rolling boil. Add the tri-color rotini and cook according to package directions until al dente, about 8 to 10 minutes. Drain the pasta and rinse under cold water until it reaches room temperature. Transfer to a very large mixing bowl.
  2. Add the halved cherry tomatoes, sliced pepperoni, diced red onion, diced green bell pepper, cubed mozzarella, grated Parmesan, and olives to the bowl with the pasta. Set aside.
  3. In a separate medium bowl, combine the olive oil, red wine vinegar, Italian seasoning, garlic powder, salt, black pepper, and red pepper flakes. Whisk until well blended.
  4. Pour the vinaigrette over the pasta salad and toss gently until everything is evenly coated. Cover and refrigerate for at least 1 hour to let the flavors meld.
  5. If the pasta salad has been chilled for several hours or overnight, let it sit at room temperature for 20 to 30 minutes before serving. Toss again to redistribute the dressing, then serve.
