  • 1/2 cup (120 ml) beef broth
For the Soup Base
  • 1 tablespoon (15 ml) olive oil California-grown preferred
  • 4 large carrots chopped
  • 1 bag (16 oz) frozen seasoning blend or 1 large onion, chopped
  • 2 large russet potatoes chopped into 1/2-inch cubes
Remaining Ingredients
  • 1 bag (16 oz) frozen peas
  • 1 bag (16 oz) frozen green beans
  • 1 bag (16 oz) frozen corn
  • 3 1/2 cups (840 ml) beef broth remaining from container
  • 2 cans (10.75 oz each) tomato soup condensed
  • 1 can (10.75 oz) water fill one empty soup can
  • salt and pepper to taste

Method

Prepare the Beef
  1. Season the pot roast generously with salt and pepper. Place it in a slow cooker with 1/2 cup of beef broth. Cook on LOW for about 10 hours, until the meat is tender and shreds easily.
  2. Once cooked, transfer the roast to a cutting board and shred it with two forks. Set aside.
Build the Soup
  1. In a very large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped carrots and frozen seasoning blend. Saute for 5-7 minutes, until the carrots begin to soften and the onions are translucent.
  2. Add the shredded beef, chopped potatoes, frozen peas, frozen green beans, frozen corn, remaining beef broth, condensed tomato soup, water, and additional salt and pepper to taste. Stir to combine.
  3. Bring the soup to a boil over high heat, then reduce the heat to low. Cover the pot and let it simmer for about 1 hour, stirring occasionally, until the potatoes are tender and the flavors meld.
  4. During simmering, add a splash of water if the soup becomes too thick. Adjust seasoning with salt and pepper before serving.

Notes

For a richer flavor, sear the pot roast in a hot skillet before adding to the slow cooker. This soup freezes well for up to 3 months; cool completely before freezing in airtight containers. If you prefer a thicker soup, mash some of the potatoes against the side of the pot before serving. Substitute any frozen vegetables with fresh ones if in season, adjusting cooking time accordingly. Serve with crusty sourdough bread from San Francisco for a true California touch.
