Ingredients
  

Stir Fry
  • 8 oz flat rice noodles about 1/4 inch wide; use stir-fry style rice noodles
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons vegetable or peanut oil divided
  • 1 lb chicken breast sliced into thin strips
  • 1 medium red bell pepper thinly sliced
  • 1/3 cup shallots minced
  • 1 1/2 cups matchstick carrots or shredded carrots
  • 4 cloves garlic minced
  • 2 large eggs beaten
  • 3 cups bean sprouts about 6 oz (170 g)
  • 2 green onions chopped
  • 1/2 cup unsalted peanuts roughly chopped
  • 1/4 cup cilantro leaves chopped
  • 1 tablespoon lime juice optional, for extra tang
Sauce
  • 1/3 cup packed brown sugar
  • 3 tablespoons low sodium soy sauce
  • 3 tablespoons fish sauce
  • 3 tablespoons fresh lime juice
  • 3 tablespoons rice vinegar
  • 3 tablespoons smooth peanut butter
  • 1 1/2 tablespoons chili paste sambal oelek or Sriracha; adjust to taste
  • 3/4 teaspoon dried basil, ground coriander, ground ginger each
  • 1/4 teaspoon black pepper or up to 1/2 teaspoon

Method
 

  1. Cook the rice noodles according to the package directions, stopping while they are still slightly firm to the bite, since they will continue cooking in the sauce. Rinse the noodles under cold water, drain well, and toss with the toasted sesame oil. Set aside.
  2. In a medium mixing bowl, whisk together the brown sugar, soy sauce, fish sauce, lime juice, rice vinegar, peanut butter, chili paste, dried basil, coriander, ginger, and black pepper until the sugar is dissolved and the sauce is smooth. Set aside.
  3. Meanwhile, heat 1 tablespoon of the vegetable or peanut oil in a large nonstick skillet or wok over medium-high heat. Add the chicken and let it sear undisturbed for 1 minute, then stir-fry until just cooked through. Transfer the chicken to a plate and wipe out the pan.
  4. Return the skillet to medium-high heat and add the remaining 1 tablespoon oil. Add the bell pepper and shallots and saute for 1 minute. Add the carrots and garlic and cook for 1 more minute. Reduce the heat to medium, pour in the beaten eggs, and stir constantly until softly scrambled.
  5. Pour the sauce into the skillet and add the noodles, then increase the heat to medium-high. Toss everything together until evenly coated and cook, stirring, until the noodles are chewy-tender, about 1 to 2 minutes. Fold in the cooked chicken, bean sprouts, green onions, and peanuts, and heat through.
  6. Taste the pad thai and add an extra tablespoon of lime juice if you prefer more tang, plus more chili paste if you want additional heat. Sprinkle with cilantro and serve right away.

Notes

Feel free to swap the chicken for shrimp, tofu, or thinly sliced beef; just adjust the cooking time so the protein stays tender.
Cook the rice noodles just until al dente before stir-frying, or they will become mushy once combined with the sauce.
Use low sodium soy sauce to keep the dish from being too salty; tamari works as a gluten-free option.
If you cannot find sambal oelek, use Sriracha or crushed red pepper flakes in its place.
Leftovers keep in an airtight container in the refrigerator for up to 3 days; reheat with a splash of water in a skillet or microwave.
Make the sauce ahead of time and refrigerate it for up to a week so weeknight cooking is even faster.
Serve with lime wedges, extra chopped peanuts, and cilantro, and add chili crisp or Sriracha for more heat.
