Chimichurri Steak Salad with California Avocado and Meyer Lemon

Ingredients
  

For the Chimichurri Sauce
  • 1/2 cup extra virgin olive oil (preferably from Napa Valley)
  • 2 tablespoons white wine vinegar
  • 1 1/2 ounces fresh flat-leaf parsley, finely chopped about 1 packed cup after chopping
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1/2 teaspoon sea salt plus more to taste
  • 1/2 teaspoon crushed red pepper flakes adjust for heat preference
For the Steak Salad
  • 1 pound flank steak or skirt steak
  • 1 teaspoon olive oil for grilling
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups mixed salad greens like arugula or spring mix
  • 1 large California avocado (Hass), sliced
  • 1 medium Meyer lemon, cut into wedges for serving

Method
 

Make the Chimichurri Sauce
  1. In a small bowl or a glass jar with a tight-fitting lid, combine the olive oil, white wine vinegar, chopped parsley, minced garlic, dried oregano, salt, and crushed red pepper flakes.
  2. Stir with a spoon or shake the jar vigorously until the ingredients are well combined and the sauce looks emulsified.
  3. Taste and adjust seasoning with more salt or red pepper flakes if desired. Set aside while you prepare the steak.
Cook the Steak
  1. Preheat a grill, grill pan, or cast-iron skillet over high heat. Rub the steak with olive oil and season both sides with salt and black pepper.
  2. Grill the steak for about 4 to 5 minutes per side for medium-rare, or until it reaches your desired level of doneness. Remove from heat and let it rest on a cutting board for 5 minutes before slicing against the grain.
Assemble the Salad
  1. Divide the mixed salad greens among four plates. Top with slices of avocado and the rested steak, sliced thinly against the grain.
  2. Drizzle generously with the chimichurri sauce and serve with Meyer lemon wedges on the side for squeezing over the top.

Notes

For a milder chimichurri, reduce the crushed red pepper flakes to 1/4 teaspoon. This sauce can be made up to 2 days ahead and stored in the refrigerator; bring to room temperature before serving. If you don't have Meyer lemons, regular lemons work just fine. Letting the steak rest after grilling is crucial for juiciness. Leftover chimichurri is great on roasted vegetables or grilled chicken.
