  • 1 pound smoked beef, cooked and crumbled
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (14.5 oz) diced tomatoes with green chiles
  • 1 small onion, chopped
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 teaspoon chili powder
  • Salt and black pepper to taste
Cornbread Topping
  • 1 package (8.5 oz) cornbread mix
  • 1 large egg
  • 1/3 cup milk or buttermilk for tang

Method
 

  1. Preheat oven to 400°F. Lightly grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add the crumbled smoked beef, black beans, corn, diced tomatoes with green chiles, chili powder, salt, and pepper. Stir well and cook for 2-3 minutes until heated through.
  4. Transfer the beef mixture to the prepared baking dish and spread evenly.
  5. In a medium bowl, whisk together the cornbread mix, egg, and milk until just combined. Pour the batter over the filling, spreading gently to cover.
  6. Sprinkle the shredded cheese evenly over the cornbread batter.
  7. Bake for 25-30 minutes, until the cornbread is golden and a toothpick inserted into the topping comes out clean.
  8. Let the casserole cool for 5-10 minutes before slicing and serving.
