Ingredients
  

For the cranberry filling
  • 8 ounces fresh cranberries
  • 6 tablespoons granulated sugar
  • 1/2 teaspoon Meyer lemon zest finely grated
  • 1 teaspoon Meyer lemon juice freshly squeezed
  • 1/2 cup water
For the crust and crumb topping
  • 1 1/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt fine sea salt
  • 1/2 cup unsalted butter cold, cut into small pieces
For the cheesecake filling
  • 8 ounces cream cheese softened
  • 1/2 cup granulated sugar
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract pure

Method
 

To make the cranberry filling
  1. In a heavy-bottomed saucepan, stir together the fresh cranberries, granulated sugar, Meyer lemon zest, Meyer lemon juice, and water. Bring the mixture to a boil over medium-high heat.
  2. Reduce the heat to medium-low and let the cranberries simmer gently for about 10 minutes, until they have burst and softened. Remove the pan from the heat and allow the filling to cool completely.
To make the crust
  1. Preheat the oven to 350°F. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the cold butter pieces and work the mixture with a pastry blender or two forks until it becomes coarse, crumbly, and holds together when pinched. Set aside 1/2 cup of this crumb mixture for the topping.
  2. Transfer the remaining crumb mixture into a 9-inch pie pan or a 9-inch tart pan with a removable bottom. Press the mixture firmly and evenly across the bottom and up the sides of the pan.
  3. Bake the crust for 10 minutes, then set it aside to cool slightly while you prepare the cheesecake filling.
To assemble and bake
  1. In a large mixing bowl, beat the softened cream cheese and granulated sugar with an electric mixer on medium speed until light and fluffy. Add the egg and vanilla extract, and continue mixing until the filling is completely smooth.
  2. Pour the cheesecake filling over the slightly cooled crust and spread it into an even layer.
  3. Drop the cooled cranberry mixture by teaspoonfuls over the cheesecake filling, leaving about a 1/2-inch border around the edges of the crust.
  4. Crumble the reserved crust mixture evenly over the top of the cranberries.
  5. Bake the pie for 30 to 35 minutes, until the edges are golden brown and the cheesecake filling is set in the center.
  6. Let the pie cool completely on a wire rack, then cover and refrigerate for at least 2 hours before slicing and serving. Keep the pie stored in the refrigerator.

Notes

For a flakier, more tender crust, make sure the butter is very cold and work the dough just until it forms crumbs. No pastry blender? Two forks or your fingertips work just fine. If fresh cranberries are out of season, unsweetened frozen cranberries can be used without thawing first. Use a metal pie pan if possible; glass or ceramic may need a few extra minutes of baking time. Refrigerate the finished pie for at least 2 hours, preferably overnight, so the cheesecake sets completely for clean slices. To make ahead, prepare the pie up to 2 days in advance and keep it chilled; it also freezes well for up to a month (wrap tightly without the topping, then add the topping after thawing). Serve chilled, straight from the fridge, and garnish with a few fresh cranberries and a sprig of mint for a pretty California-style presentation.
