- Heat the oven to 375°F (190°C) and lightly coat a large baking dish with butter, oil, or nonstick spray.
- Bring a large pot of generously salted water to a boil and cook the pasta until just shy of tender. Drain well and set aside.
- Set a large skillet over medium-high heat. Add the butter and olive oil, and once the butter melts, add the shrimp. Season with salt and pepper and cook for 2 to 3 minutes until the shrimp turn pink and opaque. Transfer the shrimp to a plate.
- Add the garlic to the same skillet and cook, stirring constantly, for about 30 seconds until fragrant.
- Pour in the chicken broth, lemon zest, and lemon juice, then simmer for 2 minutes, scraping up any browned bits from the bottom of the skillet.
- Reduce the heat and stir in the heavy cream, 1 cup of the mozzarella, and all of the Parmesan. Stir until the cheeses melt into a smooth sauce.
- In a large bowl, toss the cooked pasta with the sauce, then gently fold in the shrimp and parsley.
- Transfer the mixture into the prepared baking dish and scatter the remaining 1/2 cup of mozzarella over the top.
- Bake for 20 to 25 minutes until the sauce is bubbly and the top is golden.
- Let rest for a few minutes, sprinkle with extra parsley, and serve hot.

For extra browning, switch the oven to broil for the last 1 to 2 minutes and watch closely.
Be careful not to overcook the shrimp on the stove; they will continue cooking in the oven.
Use half-and-half instead of heavy cream for a lighter sauce, though the bake will be less rich.
Leftovers keep in an airtight container in the refrigerator for up to 3 days; reheat gently with a splash of broth or cream.
