Ingredients
  

Dressing
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 teaspoon granulated sugar
  • 1 teaspoon white or cider vinegar
  • 1 tablespoon fresh lime juice
  • salt and freshly ground black pepper to taste
Slaw
  • 1 pound coleslaw mix (shredded cabbage and carrots)
  • 1 small bunch scallions, thinly sliced
  • 1 Granny Smith apple, cored and julienned
  • 1 red apple (such as Fuji or Gala), cored and julienned

Method
 

Make the Dressing
  1. In a small bowl, whisk together the mayonnaise, sour cream, sugar, vinegar, lime juice, and a pinch of salt and pepper until smooth and creamy. Taste and adjust the seasoning, adding more sugar or vinegar if you like.
Prepare the Apples and Scallions
  1. Core and julienne both apples (no need to peel). Thinly slice the scallions.
Assemble the Slaw
  1. In a large bowl, combine the coleslaw mix, apples, and scallions. Pour the dressing over the top and toss everything together until well coated. Season with additional salt and pepper if needed (this salad benefits from a generous hand with both).
Serve or Chill
  1. You can serve the slaw immediately for a crisp texture, or refrigerate it for a few hours to let the flavors meld. Enjoy!

Notes

For a lighter dressing, substitute half the mayo with extra Greek yogurt.
