Prep chicken
- Season chicken with salt, pepper, and garlic powder.
- Beat eggs and buttermilk together. Place breadcrumbs on a plate. Dip the chicken in the egg wash, then into the breadcrumbs, and repeat.
- Set the chicken aside. Prepare a pan with oil and heat it to medium. Fry the chicken until cooked all the way through.
Prep Bell Peppers
- Preheat the oven to 400°F.
- Split the bell peppers in half lengthwise.
- Add a little marinara sauce to the bottom of the bell peppers. Slice the fried chicken and place the pieces on top. Drizzle with a little more sauce, then top with mozzarella cheese. Garnish with Italian seasoning.
- Repeat the process for the remaining bell peppers. Place them in the oven for 25-30 minutes.
- Remove from the oven and serve.
