Ingredients
  

Chicken
  • 1 pound thin chicken breast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
Chicken Breading
  • 1 cup italian breadcrumbs
  • 3 large eggs
  • 1/4 cup buttermilk
Bell Peppers
  • 8 bell peppers
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella
  • garnish Italian seasoning

Method
 

Prep chicken
  1. Season chicken with salt, pepper, and garlic powder.
  2. Beat eggs and buttermilk together. Place breadcrumbs on a plate. Dip the chicken in the egg wash, then into the breadcrumbs, and repeat.
  3. Set the chicken aside. Prepare a pan with oil and heat it to medium. Fry the chicken until cooked all the way through.
Prep Bell Peppers
  1. Preheat the oven to 400°F.
  2. Split the bell peppers in half lengthwise.
  3. Add a little marinara sauce to the bottom of the bell peppers. Slice the fried chicken and place the pieces on top. Drizzle with a little more sauce, then top with mozzarella cheese. Garnish with Italian seasoning.
  4. Repeat the process for the remaining bell peppers. Place them in the oven for 25-30 minutes.
  5. Remove from the oven and serve.
