Easy Blue Cheese Dressing with Chunky Crumbles

Ingredients
  

  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 tablespoon fresh parsley, finely chopped
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1/4 teaspoon kosher salt
  • 3/4 cup blue cheese crumbles about 4 ounces

Method
 

  1. In a medium bowl, stir together the sour cream, mayonnaise, parsley, lemon juice, garlic, salt, and half of the blue cheese crumbles. Use a fork to mash the cheese into the mixture until evenly distributed.
  2. Fold in the remaining blue cheese crumbles so large chunks remain. Serve right away or chill in an airtight container for up to 2 weeks.

Notes

To thin the dressing, stir in 1 to 2 tablespoons of milk or buttermilk until it reaches your ideal consistency.
For a smoother texture, blend all ingredients in a food processor before folding in the last bit of blue cheese.
This recipe makes about 1 cup of dressing, enough for 8 generous 2-tablespoon servings.
Use vegetarian blue cheese if that matters for your diet, since some brands contain animal rennet.
