Easy Caramel Apple Cheesecake Dip

Ingredients
  

For the dip
  • 1/2 cup graham cracker crumbs from about 4 whole crackers
  • 12 ounces cream cheese softened to room temperature
  • 2 tablespoons salted butter softened
  • 1 cup powdered sugar sifted if lumpy
  • 1/2 teaspoon vanilla extract
  • 16 ounces caramel dip warmed until easy to spoon
  • 4 ounces whipped topping thawed
  • 1/3 cup salted peanuts chopped
  • as needed apple slices and pear slices for serving

Method
 

  1. Spread the graham cracker crumbs evenly over the bottom of a 9-inch pie plate.
  2. In a large bowl with a hand mixer, blend the cream cheese and butter together for about 1 minute, until smooth. Add the powdered sugar and vanilla, then beat on high speed for another minute.
  3. Spoon the cream cheese mixture gently over the graham cracker crust, smoothing the top.
  4. Spoon the warmed caramel dip over the cheesecake layer, spreading it lightly to cover.
  5. Let the caramel cool to room temperature, then spread the whipped topping over the caramel. Sprinkle with the chopped peanuts.
  6. Cover and refrigerate until serving time. This dip can be made a day in advance. Serve with apple and pear slices for dipping.

Notes

Use full-fat cream cheese for the best thick and creamy texture; low-fat versions can make the dip watery.
Soften the cream cheese and butter beforehand so the cheesecake layer mixes up silky smooth.
If the caramel dip is too thick to spoon, microwave it in 15 second bursts, stirring until it loosens.
Keep leftovers tightly covered in the fridge for up to 3 days, but add the peanuts just before serving to keep them crunchy.
Pulse whole graham crackers in a food processor to make your own crumbs.
This dip also tastes great with pretzels, vanilla wafers, or even fresh strawberries alongside the apple and pear slices.
