Easy Creamy Garlic Chicken Gnocchi

Ingredients
  

  • 2 large chicken breasts sliced into cubes
  • 1/2 cup of flour
  • 1/2 tsp each of salt pepper, paprika, garlic powder
  • 2 TBSP olive oil
  • 2 TBSP butter
  • 2 TBSP of minced garlic
  • 1 cup of chicken broth
  • 1 cup of heavy cream
  • 1 cup of Parmesan cheese
  • 1/2 tsp each of oregano thyme, and red pepper flakes
  • 1/3 cup of chopped sun dried tomatoes
  • 1 pack of gnocchi

Method
 

  1. Mix flour, salt, pepper, garlic, and paprika.
  2. Dredge chicken breasts in the flour and seasoning mixture.
  3. Heat olive oil and butter in a skillet over medium-high heat.
  4. Cook chicken for 4-5 minutes per side until golden brown and cooked through to 165°F.
  5. Remove the chicken from the skillet and set aside.
  6. Add garlic, chicken broth, heavy cream, and Parmesan cheese, then stir continuously.
  7. Add the sun-dried tomatoes, red pepper flakes, oregano, and thyme.
  8. Stir well and simmer, reducing heat to medium-low or low.
  9. Add one package of gnocchi, cover, and cook for 2-3 minutes, or until the gnocchi are tender.
  10. Once the gnocchi is tender, return the chicken to the skillet and serve.
  11. Enjoy!

Notes

Ingredient Swap: I often reach for boneless, skinless chicken thighs if I want a richer flavor in my creamy chicken and gnocchi.
Just cook them until they're tender and cooked through
