Ingredients

  • 1/2 cup honey
  • 2 tablespoons hot sauce like Frank's RedHot
  • 2 tablespoons red pepper flakes or crushed red chiles

Method

  1. In a 2-cup glass measuring cup, stir together the honey, hot sauce, and red pepper flakes.
  2. Microwave on high for 1 minute, then stir well. Continue microwaving in 20-second bursts, stirring between each, until the mixture reduces to a generous 1/2 cup (about 8 total intervals). Watch closely to prevent boiling over.
  3. Pour the hot honey through a fine-mesh strainer into a clean jar, discarding the pepper flakes. Use immediately while warm, or let cool to room temperature before sealing.

Notes

Substitute red pepper flakes with a dried chile like árbol for a different heat profile.
Store in an airtight jar at room temperature for up to 3 months.
Make ahead: This keeps well, so double the batch for gifts or future use.
Avoid over-reducing: If the honey gets too thick, it will harden when cool.
Drizzle over avocado toast, fried chicken, or roasted Brussels sprouts for a sweet-spicy kick.
For a milder version, reduce the hot sauce to 1 tablespoon and use 1 tablespoon of pepper flakes.
If you don't have a microwave, simmer the mixture in a small saucepan over low heat for 5-7 minutes, stirring often.
