Preparation
- Wash the baby potatoes and cut them in half. Mince the garlic cloves and set aside.
- In a small bowl, mix the Italian seasoning, salt, pepper, and red pepper flakes (if using). Rub the chicken breasts with the olive oil, then coat evenly with the spice mixture.
Slow Cooker Assembly
- Place the halved potatoes in an even layer at the bottom of a 6-quart slow cooker. Arrange the seasoned chicken breasts on top of the potatoes.
- Pour the chicken broth over the chicken and potatoes, making sure the liquid spreads evenly.
- Sprinkle the minced garlic over the chicken, then scatter the grated Parmesan cheese on top, covering the chicken as much as possible.
Cooking
- Cover the slow cooker and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken is tender and cooked through. The potatoes should be fork-tender.
- Check that the chicken has reached an internal temperature of 165°F using an instant-read thermometer. Gently remove the chicken and potatoes from the slow cooker, spooning any remaining sauce over the top.
- Garnish with fresh parsley if desired, and serve hot.

For a richer flavor, use freshly grated Parmesan instead of pre-shredded. You can substitute chicken thighs for breasts; adjust cooking time to 7-8 hours on low. Store leftovers in an airtight container in the fridge for up to 3 days. To make ahead, assemble everything in the slow cooker insert and refrigerate overnight, then cook as directed. Avoid opening the lid during cooking to maintain temperature. Serve with a side of steamed green beans or a simple green salad.
