- Soak the wooden skewers in water for at least 30 minutes to prevent them from burning on the grill.
- Cut the chicken breasts into 1-inch chunks and place them in a large mixing bowl.
- Season the chicken with salt, black pepper, garlic powder, and smoked paprika. Drizzle with olive oil and toss until evenly coated.
- Thread the seasoned chicken pieces onto the soaked skewers, leaving a small gap between each piece for even cooking.
- Preheat a grill to medium-high heat, or preheat the oven to 400°F if baking.
- Grill the skewers for about 10 minutes, turning once halfway through, until the chicken is cooked through. Alternatively, bake on a lined sheet pan for 15 minutes.
- Meanwhile, in a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, minced garlic, and grated ginger to make the bang bang sauce.
- Brush the bang bang sauce generously over the hot chicken skewers. Sprinkle with chopped cilantro and sliced green onions, and serve immediately with lime wedges.

Notes
For extra heat, add more sriracha or a pinch of cayenne to the sauce. Don't skip soaking the skewers or they may char. Leftover skewers keep in the fridge for up to 3 days. The bang bang sauce can be made 2 days ahead and refrigerated. Avoid overcrowding the skewers for even cooking. Serve as an appetizer or over rice for a main dish. For a dairy-free version, use vegan mayonnaise.
