Ingredients

  • 1 French baguette or Italian loaf large (16-18 inch)
  • 1/2 cup unsalted butter (1 stick), softened
  • 8-10 cloves fresh garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon Napa Valley olive oil optional
  • 2 cups cooked chicken shredded
  • 4 ounces cream cheese softened
  • 1/2 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons milk
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes optional
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup shredded provolone or white cheddar optional
  • Fresh parsley chopped (for garnish)

Method

  1. Cook and shred 2 cups of chicken. In a large bowl, combine the shredded chicken with 4 oz softened cream cheese, ½ cup mayonnaise, ¼ cup Parmesan, 2 tbsp milk, 1 tsp onion powder, 1 tsp garlic powder, ½ tsp oregano, and ¼ tsp red pepper flakes (optional). Season with salt and pepper to taste. Set aside.
  2. Preheat your oven to 375°F (190°C). In a small bowl, mix ½ cup softened unsalted butter with 8-10 cloves minced fresh garlic, 2 tbsp chopped fresh parsley, ½ tsp sea salt, ¼ tsp black pepper, and 1 tbsp olive oil (optional).
  3. Slice the baguette lengthwise. Generously spread the garlic butter on the cut sides of both halves.
  4. Evenly spread the creamy chicken mixture over the garlic-buttered baguette halves.
  5. Sprinkle 2 cups shredded mozzarella, ½ cup grated Parmesan, and ¼ cup shredded provolone or white cheddar (optional) over the chicken mixture.
  6. Place the loaded baguette halves on a baking sheet. Bake for 15-20 minutes at 375°F (190°C) until golden and bubbly. For an extra golden crust, broil for 2-3 minutes, watching carefully.
  7. Remove from the oven and let rest for 5 minutes. Slice into portions, garnish with fresh parsley, and serve immediately.

Notes

Ingredient Swap: I've often used a pre-cooked rotisserie chicken when I'm in a pinch, it saves so much time and tastes just as amazing.
