- Cut the chicken into bite-sized pieces.
- In a bowl, whisk together honey, Sriracha sauce, soy sauce, and olive oil until well combined.
- In a large skillet, heat a tablespoon of olive oil over medium-high heat.
- Add the chicken pieces to the skillet and cook for about 5-7 minutes, stirring occasionally, until browned.
- Pour the honey Sriracha mixture over the chicken in the skillet.
- Reduce the heat to medium-low and simmer the sauce for about 10-15 minutes, or until the chicken is cooked through and the sauce thickens.
- Remove from heat and let rest for a few minutes before serving.

Chicken Choice: I really love using chicken thighs here, they just stay so juicy and absorb the sauce beautifully, but breasts are totally fine if that's what you have, just keep an eye on
