- Preheat the oven to 350°F. Lightly grease an 8x8-inch baking dish.
- In a medium bowl, combine the rolled oats, chopped pecans, cinnamon, ginger, nutmeg, melted butter, and maple syrup. Stir until everything is evenly moistened.
- Spread the sliced peaches evenly in the bottom of the prepared baking dish. Sprinkle the oat mixture over the top, covering the peaches completely.
- Cover the dish with foil and bake for 20 minutes. Remove the foil and continue baking for another 10 minutes, until the topping is golden brown and the peaches are bubbly.

For extra flavor, add a splash of vanilla extract to the topping. If your peaches are very ripe, reduce the maple syrup to 2 teaspoons. Store leftovers in the fridge for up to 3 days; reheat in the oven or microwave. To make ahead, assemble the crisp (without baking) and refrigerate for up to 24 hours; then bake as directed. Serve warm with a scoop of vanilla ice cream or a dollop of yogurt. Avoid overmixing the topping to keep it crumbly.
