Ingredients
  

For the Chicken
  • 1 lb boneless skinless chicken breasts
  • 1/4 cup honey preferably local or California wildflower
  • 2 tablespoons fresh lime juice from about 1 lime
  • 1 teaspoon lime zest
  • 2 cloves garlic minced
  • salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil or avocado oil, for cooking
For the Rice
  • 1 cup cooked white rice such as jasmine or long-grain, cooled slightly
  • 1/4 cup fresh cilantro finely chopped
  • 1 tablespoon fresh lime juice
  • salt to taste
For the Avocado
  • 2 ripe Hass avocados California-grown preferred
  • 1 tablespoon fresh lime juice
  • salt and freshly ground black pepper to taste

Method
 

  1. Season the chicken breasts generously on both sides with salt and freshly ground black pepper.
  2. In a small bowl, combine the honey, fresh lime juice, lime zest, and minced garlic; whisk until smooth to create the glaze.
  3. Warm olive oil in a large skillet over medium-high heat. Place the chicken in the pan and cook for 6 to 7 minutes per side, until golden brown and the internal temperature reaches 165°F on an instant-read thermometer.
  4. During the final 2 minutes of cooking, brush the honey-lime glaze over the chicken, allowing it to caramelize. Transfer the chicken to a cutting board and let it rest for 5 minutes before slicing into strips.
  5. In a medium bowl, toss the cooked rice with chopped fresh cilantro and lime juice. Season with salt to taste and stir until well combined.
  6. Slice the Hass avocados and gently toss the slices with lime juice, salt, and a pinch of black pepper.
  7. To assemble, set a ring mold or large cookie cutter on a serving plate. Firmly press the cilantro-lime rice into the bottom to form an even base layer.
  8. Arrange the avocado slices over the rice, slightly overlapping them to cover the surface.
  9. Place the sliced honey-lime chicken on top of the avocado, arranging it in an attractive pattern.
  10. Gently lift off the ring mold. Drizzle any leftover glaze around the plate for extra flavor and presentation.
  11. Repeat for the remaining servings. Serve right away for the best texture.
