Ingredients
  

  • 4 tablespoons unsalted butter
  • 2 cups diced yellow onion
  • 1 pound fresh cremini or button mushrooms, sliced
  • 2 teaspoons dried dill weed
  • 1 tablespoon Hungarian sweet paprika or half-sharp for more heat
  • 1 tablespoon low-sodium soy sauce
  • 2 cups vegetable broth preferably low-sodium
  • 2 tablespoons cornstarch
  • 1 cup whole milk
  • 1/2 cup sour cream plus more for garnish
  • 2 teaspoons fresh lemon juice from a Meyer lemon if available
  • 1/4 cup fresh flat-leaf parsley, chopped plus more for garnish
  • 1 teaspoon fine sea salt adjust to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper optional, for heat
  • Sautéed sliced mushrooms, for garnish
  • Crusty sourdough bread, for serving California-style

Method
 

  1. Melt the butter in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the diced onions and cook, stirring, for 3 to 4 minutes until softened and translucent. Add the sliced mushrooms and cook for 5 minutes, stirring occasionally, until they release their liquid and begin to brown.
  2. Stir in the dried dill, Hungarian paprika, soy sauce, and vegetable broth. Reduce the heat to medium-low, cover, and let the soup gently simmer for 15 minutes.
  3. In a small bowl, whisk together the cornstarch and whole milk until smooth. Pour the mixture into the soup, stirring constantly until well incorporated. Cover again and continue to simmer very gently for another 10 minutes, stirring occasionally to prevent sticking.
  4. Remove the pot from the heat. Stir in the sour cream, lemon juice, chopped parsley, salt, pepper, and a pinch of cayenne if using.
  5. Return the pot to low heat and cook for 3 minutes, just until heated through. Do not let the soup boil, or it may curdle.
  6. Ladle the soup into bowls. Garnish each serving with sautéed mushrooms, a dollop of sour cream, and a sprinkle of fresh parsley. Serve immediately with crusty sourdough bread.

Notes

Keep the soup at a gentle simmer throughout, especially after adding sour cream, to prevent curdling. For the best flavor, use Hungarian sweet paprika; regular paprika is much milder. You can substitute Greek yogurt for sour cream for a tangier finish. This soup thickens as it cools; thin with a splash of broth when reheating. Store leftovers in the fridge for up to 3 days; do not freeze as the dairy may separate. Serve with a crisp green salad for a complete meal.
