One Pan Honey Mustard Chicken and Broccoli

Ingredients
  

  • 4 chicken thighs bone in
  • Season chicken with salt, pepper, onion powder, garlic powder, smoked paprika. About 1 tsp each
  • 1 head of broccoli chopped into florets
  • 1 small white onion chopped
  • 1 tbsp of garlic paste
  • 2 cups of milk
  • 1/2 cup of beef broth
  • 1 tsp cornstarch
  • 1 tbsp of dijon mustard
  • 1 tbsp honey
  • 1 tbsp of olive oil
  • Salt & pepper to taste

Method
 

  1. Season the chicken and marinate for at least one hour or overnight.
  2. Sear the chicken on medium-high heat for at least 3 minutes per side until golden brown.
  3. Remove the chicken from the pan, then sauté the onion and garlic until fragrant, about one minute.
  4. Deglaze the pan with beef broth, then add corn starch and mix.
  5. Add milk, Dijon mustard, honey, salt, and pepper, then bring the mixture to a simmer.
  6. Add the broccoli and stir to combine.
  7. Return the chicken to the pan on top of the sauce, then bake in the oven at 400 degrees Fahrenheit until the chicken is cooked through and the sauce has thickened, approximately 45 minutes, for super crispy skin and tender chicken.

Notes

Serve with buttery mashed potatoes & enjoyP.S. if you prefer the broccoli to not be part of the sauce you can add it half way through the chicken cooking in the oven 😉
