  • 4 oz Brie cheese (with rind), sliced
  • 1 ripe California peach, cut into wedges
  • 1 tbsp honey
  • 1 tsp fresh thyme leaves
  • 1 1/2 tbsp salted butter, softened

Method
 

Caramelize the Peaches
  1. Heat a cast-iron grill pan or skillet over medium-high heat. Place the peach wedges onto the hot pan and cook for 2 to 3 minutes per side until distinct grill marks appear and the peaches are slightly softened and caramelized.
Assemble the Sandwich
  1. Spread the softened butter evenly over one side of each bread slice. Lay one slice, buttered side down, in a nonstick skillet or griddle. Layer with slices of Brie cheese, the caramelized peach wedges, a sprinkle of fresh thyme leaves, and a drizzle of honey.
  2. Top with the second bread slice, buttered side up. Cook over medium-low heat for 3 to 4 minutes per side, until the bread is golden brown and the Brie is fully melted. Press gently with a spatula for even browning.
