Method
- Preheat the oven to 200°C.
- Cut the potatoes in half or quarters. Place them in a bowl with olive oil, salt, pepper, and garlic, then toss until well coated.
- Transfer the potatoes to a baking tray and spread them into a single layer. Roast in the oven for 45-60 minutes, or until browned and crisp. Flip the potatoes twice with a spatula during cooking to ensure even browning.
- Remove the potatoes from the oven. Toss them with parsley, season to taste, and serve hot.
