Ingredients
  

  • 3.2 oz small red or white potatoes
  • 4 tbsp good olive oil
  • 1 1/2 tsp salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp crushed garlic 6 cloves
  • 2 tbsp finely-chopped fresh parsley

Method
 

  1. Preheat the oven to 200°C.
  2. Cut the potatoes in half or quarters. Place them in a bowl with olive oil, salt, pepper, and garlic, then toss until well coated.
  3. Transfer the potatoes to a baking tray and spread them into a single layer. Roast in the oven for 45-60 minutes, or until browned and crisp. Flip the potatoes twice with a spatula during cooking to ensure even browning.
  4. Remove the potatoes from the oven. Toss them with parsley, season to taste, and serve hot.
