Ingredients
  

  • 6 boneless, skinless chicken breasts about 2 pounds total
  • 1 cup light mayonnaise
  • 1 cup freshly grated Parmesan cheese divided
  • 1 1/2 teaspoons seasoned salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 375°F. Lightly spray a 9x13-inch baking dish with nonstick cooking spray.
  2. In a medium bowl, stir together the light mayonnaise, 1/2 cup of the Parmesan cheese, seasoned salt, garlic powder, and black pepper until well combined.
  3. Arrange the chicken breasts in the prepared dish. Spread the mayonnaise mixture evenly over each piece of chicken. Sprinkle the remaining 1/2 cup of Parmesan cheese on top. Cover the dish tightly with aluminum foil.
  4. Bake for 20 minutes. Remove the foil and continue baking for another 15 to 20 minutes, or until the chicken reaches an internal temperature of 165°F and the cheese is golden and bubbly.
  5. Take the dish out of the oven, garnish with fresh parsley, and serve warm.

Notes

For extra flavor, add a pinch of paprika or dried oregano to the mayonnaise mixture.
If your chicken breasts are very thick, pound them to an even thickness for more consistent cooking.
