Ingredients
  

For the Salad
  • 2 medium ripe peaches thinly sliced
  • 4 cups watermelon cubed, about 1 1/2 lb
  • 1 cup cucumber diced, peeled if desired
  • 1/2 cup red onion thinly sliced
  • 1/4 cup fresh mint leaves chopped
  • 2 tablespoons fresh lime juice from about 1 large lime
  • to taste kosher salt and freshly ground black pepper
  • 1/2 cup crumbled feta cheese optional, for serving

Method
 

  1. Rinse the peaches and watermelon under cool running water, then pat them dry with a clean kitchen towel.
  2. Slice the peaches into thin wedges and cut the watermelon into bite-size cubes.
  3. Dice the cucumber into small, even pieces. If you prefer a milder flavor, peel it first.
  4. Thinly slice the red onion into strips or half-moons.
  5. In a large serving bowl, combine the peach slices, watermelon cubes, cucumber, and red onion; toss gently.
  6. Sprinkle the chopped mint over the salad and stir lightly to distribute.
  7. Drizzle with lime juice, season with salt and pepper, and toss gently until everything is well coated.
  8. If time allows, chill the salad for 30 minutes before serving. Just before serving, top with crumbled feta if using.

Notes

Use ripe but firm peaches so they keep their shape when tossed.
Substitute honeydew or cantaloupe for the watermelon if that is what looks best at the market.
Add the feta at the very end so it does not become soggy or melt into the dressing.
For a California twist, fold in diced Hass avocado just before serving.
You can prep the fruit and vegetables up to 4 hours ahead, but add the lime juice and mint right before serving.
If the salad sits, it will release juice; drain excess liquid before serving leftovers.
A pinch of chili powder or sumac adds a nice savory finish.
