Ingredients
  

  • 4 salmon fillets about 6 oz each
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup panko breadcrumbs
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 garlic minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon dried parsley
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Prepare the oven and a baking sheet.
  2. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  3. Prepare the salmon.
  4. Place the salmon fillets skin-side down on the baking sheet. Pat them dry with paper towels.
  5. Make the parmesan crust mixture.
  6. In a small bowl, combine grated parmesan, panko breadcrumbs, minced garlic, lemon zest, parsley, paprika, salt, and black pepper. Drizzle in the olive oil and mix until the texture resembles slightly damp crumbs.
  7. Add flavor to the salmon.
  8. Spread a thin layer of Dijon mustard over each salmon fillet.
  9. Add the crust.
  10. Press the parmesan breadcrumb mixture evenly onto the top of each fillet.
  11. Bake until golden.
  12. Place the tray in the oven and bake for 12–15 minutes, depending on the salmon's thickness.
  13. Finish with fresh lemon.
  14. Once baked, drizzle with fresh lemon juice or serve with lemon wedges.
