Method
- Preheat the oven to 425°F (220°C).
- Wash and dry the potatoes. Slice each potato vertically about 1/4 inch apart, but do not cut all the way through.
- In a mixing bowl, combine melted butter, minced garlic, rosemary, thyme, salt, pepper, and paprika.
- Place potatoes on a parchment-lined baking sheet. Brush them with the herb mixture, ensuring it gets into all slices.
- Roast for 45-50 minutes, basting every 15 minutes. Continue roasting until golden brown outside and tender inside.
- Garnish with freshly chopped parsley before serving hot.
