Method
- Preheat oven to 400°F.
- Cut bell peppers in half lengthwise and remove seeds. Place them cut-side up in a greased baking dish.
- Combine shredded chicken, mayonnaise, hot sauce, garlic powder, onion powder, salt, black pepper, and green onions in a mixing bowl. Mix well.
- Fill each pepper with the chicken mixture and pack tightly.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 20 minutes until peppers are tender.

Ingredient Swap: I've found that using a mix of red, yellow, and orange bell peppers really brightens up the dish visually, and sometimes I'll even add a sprinkle of fresh cilantro
