- Preheat your oven to 375 degrees Fahrenheit.
- In a medium bowl, stir together the softened cream cheese, shredded cheddar, diced jalapenos, chopped green onions, garlic powder, onion powder, and a pinch of salt and pepper until well combined.
- Arrange the chicken breasts in a single layer in a baking dish. Spoon the cheese mixture evenly over each breast, spreading it to cover the top.
- Sprinkle the breadcrumbs over the cheese mixture, pressing lightly so they stick.
- Bake for 25 to 30 minutes, until the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit) and the topping is golden and bubbly.
- Let the dish rest for about 5 minutes before serving. Enjoy warm.

Notes
For extra heat, use pickled jalapenos with some of the brine. You can substitute Monterey Jack or pepper jack cheese for the cheddar. Leftovers keep well in the fridge for up to 3 days; reheat in the oven or microwave. To make ahead, assemble the dish (without breadcrumbs) and refrigerate; add breadcrumbs just before baking. If the topping browns too quickly, loosely cover with foil for the last 10 minutes. Serve with a side salad or steamed vegetables for a complete meal.
