Creating Creamy Chicken Thighs with Spinach is a simple and enjoyable process. Follow these steps for an amazing dish
- Chop the spinach, dice the onion, and mince the garlic. Set aside.
- In a large skillet, heat the olive oil over medium heat.
- Season the chicken thighs with salt, pepper, and paprika. Add them to the hot skillet and cook for 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.
- Stir in the chopped spinach and cook for another 2 minutes until wilted.
- Pour in the chicken broth and heavy cream. Stir to combine and simmer for 3-5 minutes to thicken slightly.
- Return the cooked chicken thighs to the skillet. Simmer them in the sauce for an additional 2-3 minutes to absorb the flavors.
- Taste the sauce and adjust the seasoning with salt and pepper as needed.
- Remove from heat and sprinkle with grated Parmesan cheese before serving, if desired.

Notes
Ingredient Swap: I've found that if I'm out of heavy cream, using half-and-half still creates a beautifully creamy sauce, just a tiny bit lighter.
