  1. Chop the spinach, dice the onion, and mince the garlic. Set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Season the chicken thighs with salt, pepper, and paprika. Add them to the hot skillet and cook for 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until softened and fragrant.
  5. Stir in the chopped spinach and cook for another 2 minutes until wilted.
  6. Pour in the chicken broth and heavy cream. Stir to combine and simmer for 3-5 minutes to thicken slightly.
