Ingredients
  

For the Noodles
  • 8 oz (227 g) dry udon noodles or substitute with rice noodles for gluten-free
For the Peanut Sauce
  • 1/2 cup (130 g) creamy peanut butter use natural or regular
  • 3 tbsp reduced sodium soy sauce or tamari for gluten-free
  • 3 tbsp rice wine vinegar
  • 2 tbsp fresh lime juice from about 1 lime
  • 1 tbsp honey or agave nectar for vegan option, use agave
  • 1 tbsp toasted sesame oil
  • 2-3 tbsp water or vegetable broth as needed for thinning
For the Salad
  • 1 cup (155 g) frozen shelled edamame thawed
  • 1 cup (122 g) matchstick carrots or julienned carrots
  • 1/4 cup (36 g) unsalted roasted peanuts roughly chopped
  • 1 medium shallot thinly sliced
  • 1 bunch green onions sliced, white and green parts
  • 1/4 cup thinly sliced Thai basil or regular basil if unavailable
  • 1-2 tbsp spicy chili crisp optional, for garnish

Method
 

Cook the Noodles
  1. Bring a large pot of salted water to a boil. Cook the udon noodles according to package directions, typically 3-5 minutes for fresh or 8-10 minutes for dry. Drain in a colander and rinse under cold running water until the noodles are completely cool. Shake off excess water and set aside.
Make the Peanut Sauce
  1. While the noodles cook, prepare the sauce. In a medium bowl, whisk together the creamy peanut butter, soy sauce, rice wine vinegar, lime juice, honey, and toasted sesame oil until smooth and well combined. The mixture should be pourable like a dressing. If it is too thick, add water or vegetable broth 1 tablespoon at a time, whisking until you reach the desired consistency.
Assemble the Salad
  1. In a large mixing bowl, combine the chilled noodles with the peanut sauce. Use a rubber spatula or salad tongs to toss until every strand is evenly coated.
  2. Add the thawed edamame, matchstick carrots, chopped peanuts, sliced shallot, green onions, and Thai basil. Toss everything together until well distributed.
  3. Taste and adjust seasoning if needed. Serve immediately, topped with dollops of spicy chili crisp for heat and crunch if desired.

Notes

To speed up cooling, toss the cooked noodles with a teaspoon of sesame oil and refrigerate for 1-2 hours instead of rinsing. Swap udon with rice vermicelli or glass noodles for a gluten-free version; even regular spaghetti works. If your peanut butter is very thick, add extra water to the sauce gradually until it flows easily. The salad can be made up to 24 hours ahead; store covered in the fridge and toss again before serving. Leftovers keep for 3-4 days in an airtight container. For a warm version, skip rinsing the noodles and gently reheat everything in a skillet over medium heat, stirring frequently.
