Ingredients
  

For the pasta
  • 1 tbsp tbsp kosher salt for the boiling water
  • 8 oz oz penne pasta about 225 g
For the shrimp and sauce
  • 1 lb lb raw shrimp, peeled and deveined about 450 g
  • 2 tbsp tbsp Cajun seasoning adjust to your heat preference
  • 1 tbsp tbsp olive oil
  • 1 tbsp tbsp unsalted butter
  • 1 cup cup heavy cream 240 ml
  • 1/2 cup cup finely grated Parmesan cheese about 50 g, preferably freshly grated

Method
 

  1. In a mixing bowl, toss the raw shrimp with the Cajun seasoning and olive oil until evenly coated.
  2. Add the kosher salt to a large pot of water and set it over high heat to bring to a boil. While that water comes up to temperature, preheat a wide skillet over medium-high heat.
  3. Drop the penne into the boiling salted water and cook to al dente. Scoop out at least 1/2 cup of the starchy pasta water before draining, then drain the pasta and set it aside.
  4. Right after adding the pasta to the water, melt the butter in the hot skillet. Lay the seasoned shrimp in a single layer and sear until golden brown on both sides, flipping just once; work in two batches if necessary to avoid crowding. Transfer the cooked shrimp to a plate, then lower the skillet heat to medium.
  5. Pour the heavy cream into the same skillet, using a flat wooden spatula to scrape up any browned bits stuck to the bottom. Let the cream bubble around the edges, then turn the heat to low and stir in the Parmesan until it melts into a smooth sauce.
  6. Return the pasta and shrimp to the skillet and toss to coat evenly. If the sauce is too thick, add the reserved pasta water one tablespoon at a time until it reaches the consistency you like. Taste and season with extra salt if needed.

Notes

Store-bought Cajun seasoning often contains more salt than homemade; start with 1 tablespoon and add more to taste.
Use freshly grated Parmesan from a block for the smoothest sauce; pre-grated cheese can clump.
Avoid overcooking the shrimp; they are done as soon as they turn pink and opaque.
Reserve extra pasta water before draining; it helps loosen the sauce without watering down flavor.
To reduce spice, cut back on the Cayenne in your Cajun seasoning or use a mild blend.
This pasta tastes best served immediately; reheat leftovers gently with a splash of cream or pasta water.
For a twist, substitute boneless chicken breast or scallops for the shrimp and adjust cooking time accordingly.
