Ingredients
  

  • 1 tablespoon vegetable oil
  • 1/4 cup thinly sliced carrots
  • 1/4 cup thinly sliced celery
  • 1/4 cup fresh bean sprouts
  • 1/4 cup sliced scallions (green onions)
  • 2 cups pre-cooked chow mein noodles or substitute with lo mein noodles
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon oyster sauce

Method
 

  1. Set a large skillet over medium-high heat and add the vegetable oil.
  2. Toss in the sliced carrots and celery, then stir-fry for 2 to 3 minutes, until they start to soften.
  3. Add the bean sprouts and sliced scallions, and cook for another minute, stirring constantly.
  4. Add the cooked chow mein noodles and toss everything together until well combined.
  5. Drizzle the soy sauce and oyster sauce over the noodles, and continue tossing for about 2 minutes, until the sauce is evenly distributed and the noodles are heated through.

Notes

For extra protein, add cooked chicken, shrimp, or tofu along with the noodles.
To make it vegetarian, replace oyster sauce with mushroom stir-fry sauce or a mix of soy sauce and a splash of hoisin.

Reheat in a skillet over medium heat with a teaspoon of water or broth to refresh the noodles.
Avoid overcooking the vegetables—they should stay slightly crisp for the best texture.
If you don't have chow mein noodles, use lo mein noodles or even spaghetti as a substitute.
