Ingredients

  • 1 pound fresh Brussels sprouts
  • 3 Tablespoons Napa Valley olive oil or any high-quality extra virgin olive oil
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon fresh Meyer lemon juice or regular lemon juice
  • 2-4 Tablespoons freshly grated Parmesan cheese

Method

  1. Begin by thoroughly washing and rinsing the Brussels sprouts, then trim off their tough stem ends.
  2. Carefully slice each Brussels sprout lengthwise into thin strips, approximately ⅛ to ¼ inch thick.
  3. Heat 2 tablespoons of the olive oil in a large nonstick skillet or a cast-iron pan over medium-high heat until shimmering.
  4. Add the prepared Brussels sprouts to the hot pan, tossing them gently to ensure they are evenly coated with the oil.
  5. Cover the skillet and cook for 2 to 3 minutes, stirring once or twice, until the sprouts just begin to develop a light golden-brown color.
  6. Once browning starts, pour in the remaining 1 tablespoon of olive oil and stir again to coat the sprouts.
  7. Sprinkle the garlic powder, sea salt, and black pepper evenly over the sprouts, then stir well to distribute the seasonings.
  8. Cover the pan once more and continue cooking for another 2 to 3 minutes, or until the sprouts have softened to your liking.
  9. Uncover the skillet, add the fresh Meyer lemon juice, and cook for an additional 1 to 2 minutes, allowing the sprouts to become nicely browned and slightly crispy.
  10. Transfer the sauteed Brussels sprouts to a serving dish immediately and generously sprinkle with freshly grated Parmesan cheese before serving.

Notes

For the best flavor and texture, always opt for fresh Brussels sprouts. Avocado oil or unsalted butter can be excellent substitutes for olive oil if preferred. If you enjoy a stronger garlic presence, swap the garlic powder for 1 teaspoon of minced fresh garlic, adding it when you introduce the other seasonings. Leftover sauteed Brussels sprouts can be stored in an airtight container in the refrigerator for up to 3 days; reheat gently on the stovetop or in the microwave. For an extra crisp finish, extend the final uncovered cooking time by another minute. These zesty sprouts make a fantastic accompaniment to roasted chicken, pan-seared salmon, or a grilled steak. Ensure your pan is adequately hot before adding the sprouts to achieve a good sear without overcooking them.
